Job Purpose

The Chef de Partie is responsible for managing a designated kitchen section, ensuring high-quality food preparation, consistency in presentation, and adherence to hygiene and safety standards, while supporting efficient kitchen operations.

Food Preparation & Quality Control

  • Take full responsibility for the preparation and presentation of dishes within the assigned section.
  • Ensure all food meets quality, taste, and presentation standards consistently.
  • Monitor portion control and minimize wastage.

Section Management & Operations

  • Manage day-to-day operations of the assigned kitchen section.
  • Coordinate with other sections to ensure smooth kitchen operations.
  • Coordinate with other outlet for the orders and dispatching accordingly.
  • Maintain HACCP manual and check list

Hygiene & Safety Compliance

  • Enforce food safety, hygiene, and sanitation standards as per municipality regulations.
  • Ensure cleanliness and proper maintenance of kitchen equipment and work areas.

Team Leadership & Training

  • Guide Commis and Demi Chef de Partie staff.
  • Provide on-the-job training and ensure adherence to kitchen standards.
  • Foster a positive and disciplined work environment.

Inventory & Stock Management

  • Monitor stock levels, place orders, and ensure proper inventory control.
  • Ensure correct storage and handling of all ingredients.

Job Specifications

  • Highschool/ Culinary diploma and relevant training is preferred.
  • Minimum 5 years of experience in a professional kitchen, with at least 1–2 years in a similar role.
  • Strong experience in managing a specific kitchen section
  • Strong knowledge of cooking techniques, recipes, and food presentation.
  • Good understanding of kitchen operations, food safety, and hygiene standards.
  • Leadership and team management skills.
  • Strong organizational and time management abilities.
  • Ability to work under pressure and meet service deadlines.
  • Attention to detail and commitment to quality.
