Role overview

Responsibilities

• Manage daily hot kitchen operations and prepare French and French-inspired dishes to established recipes and standards.
• Apply classical French techniques, including sauces, stocks, reductions, and other preparations.
• Maintain consistent taste, quality, portion control, and presentation.
• Maintain food safety, hygiene, HACCP compliance, and kitchen cleanliness.
• Monitor stock, ingredient quality, and food storage; minimize waste and control portions and costs.
• Coordinate with the Head Chef and kitchen team for smooth, timely service.
• Meet La Vue's quality standards and assist with menu development, recipe standardization, and kitchen improvements when required.

Requirements

• Proven experience as a Chef de Partie or in a similar hot kitchen role.
• Practical experience and strong knowledge of French cuisine are mandatory.
• Good understanding of classical French methods, sauces, stocks, and hot kitchen preparations.
• Knowledge of French and French-inspired café or bistro dishes is highly preferred.
• Ability to maintain quality and presentation during busy service; organizational skills, attention to detail, teamwork, and ability to work under pressure.
• Knowledge of food hygiene, HACCP, and safe food handling.
• Candidates currently based in the UAE are preferred.
