As we continue to grow, we are seeking a highly experienced senior Flutter developer to lead our mobile application development efforts.

Role Overview

The Butcher is responsible for the skilled preparation of all primary and secondary meat products within FITT Meals' central kitchen production environment.

This includes the full butchery workflow from raw material receipt through to portioned, recipe-ready outputs — as well as the production of secondary cut items including meatballs, sausages, and burger patties.

The role demands technical butchery expertise, strong yield management discipline, precise record keeping, and a thorough understanding of food safety, stock rotation, and waste minimisation in a high-volume, shift-based food manufacturing operation

Primary Butchery & Meat Preparation

  • Receive, inspect, and verify all incoming meat and poultry deliveries against purchase orders — including weight, quality, and temperature checks
  • Butcher, debone, trim, and portion all meat and poultry products to exact recipe and weight specifications defined by the Head Chef

Secondary Cut Production

  • Produce secondary meat products including meatballs, sausage blends, and burger patties in line with FITT Meals' recipes and daily production plans
  • Follow precise seasoning, mix ratios, and portioning standards for all secondary products to ensure consistency across batches
  • Operate sausage filling machines, patty presses, and mixing equipment as required
  • Maintain batch consistency and product quality standards across all secondary cut production runs
  • Flag any inconsistencies in raw material quality that may affect secondary product outcomes

Yield Management

  • Calculate and monitor yield percentages for all primary and secondary meat products against established benchmarks
  • Identify and report yield variances to the Kitchen Supervisor and recommend corrective actions
  • Optimise trimming and portioning techniques to achieve maximum yield within quality standards
  • Ensure trim and by-product material is allocated appropriately for secondary use or flagged for disposal
  • Actively contribute to waste cost reduction targets through disciplined yield practices

Record Keeping & Documentation

  • Maintain accurate daily production logs for all butchery and secondary cut outputs including batch weights, yields, and quantities produced
  • Complete incoming delivery inspection records including supplier, product, weight, temperature, and quality observations
  • Record all equipment cleaning and maintenance logs in line with kitchen hygiene schedules
  • Document any product quality issues, non-conformances, or supplier complaints accurately and promptly
  • Submit daily yield and waste reports to the Kitchen Supervisor on shift completion

Stock Rotation & Cold Storage Management

  • Apply strict FIFO (First In, First Out) stock rotation across all meat and poultry cold storage areas
  • Monitor and record cold room and chiller temperatures at regular intervals in line with HACCP requirements
  • Label all prepared, portioned, and stored products with batch dates, use-by dates, and product identification
  • Coordinate with the Stores and Procurement team to flag low stock levels, expiry risks, or quality concerns
  • Ensure all cold storage areas are maintained in a clean, organised, and compliant condition at all times

Waste Management

  • Minimise meat wastage through precise portioning, correct storage practices, and efficient secondary cut utilisation
  • Segregate and record all waste categories daily — trim waste, expired product, and unusable material
  • Report daily waste figures on shift completion sheets and highlight recurring waste patterns to the Supervisor
  • Participate in waste reduction initiatives and contribute to department-level waste KPI targets
  • Ensure all waste disposal follows FITT Meals' food waste handling and disposal procedures

Hygiene, Food Safety & Compliance

  • Maintain the highest standards of personal hygiene and PPE compliance at all times within the butchery section
  • Adhere to all HACCP, food safety, and kitchen hygiene SOPs
  • Participate in scheduled deep cleaning and pest control activities
  • Support internal and external food safety audits as required
  • Butcher, debone, trim, and portion all meat and poultry products to exact recipe and weight specifications defined by the Head Chef
  • Operate and maintain all butchery equipment safely including band saws, meat slicers, mincers, cleavers, and boning knives
  • Ensure all primary prep targets are completed accurately and on schedule to support kitchen production timelines
  • Work within defined SOP guidelines for portioning accuracy, knife safety, and equipment hygiene
