Role Description

This is a full-time, on-site South Indian Cook role based in the United Arab Emirates.

The South Indian Cook will be responsible for planning and preparing a variety of authentic South Indian dishes such as idli, dosa, vada, sambar, rasam, curries, chutneys, biryani, and other regional specialties.

Daily tasks include mis-en-place, cooking and plating dishes according to set recipes and standards, maintaining cleanliness and hygiene in the kitchen, and ensuring proper storage and rotation of ingredients.

The cook will manage cooking timelines during peak hours, coordinate with kitchen staff, and adjust recipes based on dietary requirements and portion sizes.

The role also includes monitoring inventory, assisting with menu planning, minimizing food waste, and complying with food safety and UAE health regulations.

Qualifications

  • Strong proficiency in South Indian cuisine, including breakfast items (idli, dosa, vada), curries, gravies, rice dishes, and a variety of chutneys and accompaniments.
  • Hands-on experience with traditional South Indian cooking methods and equipment, such as tawa, dosa pans, steamers, and pressure cookers.
  • Solid knowledge of ingredient selection, spice blends, and flavor balancing specific to different South Indian regions (e.g., Tamil, Kerala, Andhra, Karnataka styles).
  • Proven ability to maintain high standards of food hygiene, safety, and kitchen cleanliness, following HACCP or similar food safety guidelines.
  • Experience in volume cooking, portion control, and time management in a professional or commercial kitchen setting.
  • Capability to plan prep work, organize mis-en-place, and coordinate with team members to ensure smooth kitchen operations during busy service periods.
  • Basic inventory skills, including monitoring stock levels, reporting shortages, and helping reduce food waste through efficient storage and usage.
  • Good communication and teamwork skills, with the ability to follow instructions, maintain a respectful work environment, and support colleagues as needed.
  • Flexibility to work shifts, weekends, and holidays as required by business needs.
  • Prior experience as a South Indian Cook or Commis in hotels, restaurants
