Role Description
We are looking for a passionate Restaurant & Bar Manager to lead KAISO DIFC with energy, discipline, creativity, and strong hospitality standards.
This is not a basic operations role.
We need someone who understands Japanese food culture, bar life, sake, Japanese spirits, cocktails, guest experience, marketing, events, and revenue growth.
The role is responsible for leading the floor and bar, training the team, creating atmosphere, driving footfall, increasing sales, and building regular guests.
The right person must be able to bring passion and fun into the restaurant while keeping service standards, speed, cleanliness, preparation, and operations under control.
You will work closely with the kitchen, bar, marketing, and ownership team to grow KAISO as one of Dubai’s most exciting Japanese restaurant and bar concepts.
This includes preparing and executing events, creating cocktail ideas, supporting the sake and beverage program, improving guest engagement, and making sure every guest understands and enjoys the KAISO mazemen experience.
Key Responsibilities
Lead daily restaurant and bar operations at KAISO DIFC.
Drive awareness of KAISO as the UAE’s first Mazemen Bar.
Train the team to explain mazemen, izakaya dishes, sake, spirits, cocktails, and Japanese hospitality.
Maintain strong service standards, guest care, speed, cleanliness, and consistency.
Create energy on the floor and behind the bar.
Build regular guests and increase repeat visits.
Drive footfall, revenue, upselling, events, and guest engagement.
Support marketing, social media, promotions, launches, and brand activations.
Prepare and execute events, sake nights, cocktail nights, corporate bookings, and after-work experiences.
Develop and improve cocktails and the beverage program.
Control stock, beverage cost, wastage, ordering, inventory, and supplier coordination.
Lead with passion, discipline, fun, ownership, and care.
Qualifications
Previous experience in a Japanese restaurant, izakaya, sushi, ramen, robata, or Japanese bar concept is strongly preferred.
Strong knowledge of sake, Japanese spirits, Japanese whisky, cocktails, and bar operations.
Ability to create cocktails and support the development of a profitable beverage program.
Proven experience driving sales, footfall, events, promotions, and guest engagement.
Strong leadership skills with the ability to motivate, train, and develop a team.
Excellent service standards and deep understanding of hospitality.
Confident floor presence with the ability to host guests and build regular customers.
Commercial mindset with understanding of revenue, beverage cost, inventory, wastage, and upselling.
Experience preparing and executing events, group bookings, bar activations, and special promotions.
Strong communication skills with guests, team members, chefs, bar team, and ownership.
Hands-on, energetic, organized, and able to work evenings, weekends, and holidays.
Passion for Japanese food, drinks, culture, hospitality, music, bar life, and creating memorable guest experiences.
