About This Role
Overview
We are looking for a highly creative and technically skilled Pastry Consultant to support the development and launch of a new dessert brand on a project basis.
The consultant will work closely with the founders to create, refine, test, document, and scale dessert recipes suitable for commercial production and delivery operations.
This role is ideal for someone with strong experience in modern dessert concepts, cloud kitchen operations, flavor innovation, and recipe standardization.
Key Responsibilities
- Develop signature dessert concepts and recipes aligned with the brand vision
- Create and refine flavors, textures, fillings, toppings, sauces, and presentations
- Conduct R&D and product testing sessions
- Scale recipes from test kitchen level to commercial production quantities
- Standardize recipes with accurate measurements, methods, yields, and costing
- Ensure recipes are optimized for:
- Delivery stability
- Shelf life
- Batch production
- Operational efficiency
- Consistent quality
- Train kitchen staff on preparation methods, plating, storage, and quality standards
- Assist in sourcing ingredients, equipment, molds, packaging, and suppliers if required
- Support menu engineering and product positioning
- Develop SOPs for production, storage, assembly, and quality control
- Conduct trial runs and troubleshoot production issues prior to launch
- Work alongside founders during pre-launch testing and final menu approval
- Provide recommendations on workflow, prep systems, and kitchen setup for pastry operations
Preferred Experience
- Proven experience as a Pastry Chef, Dessert Consultant, or R&D Chef
- Experience launching dessert brands, bakeries, or cloud kitchen concepts
- Strong understanding of modern dessert trends and commercially viable products
- Experience with scaling recipes for high-volume production
- Knowledge of food costing, ingredient functionality, and production efficiency
- Experience working with delivery-first brands is highly preferred
- Ability to work independently and collaboratively in a fast-paced startup environment
Project Scope
- The consultant will work on a temporary/project basis until the successful launch of the brand.
- Scope may include:
- Recipe development
- Product testing
- Staff training
- SOP documentation
- Launch preparation
- Post-launch adjustments if required
