The employer seeks a skilled, creative Pastry Chef / Baker to develop nutritious, commercially viable desserts and baked products.
Responsibilities
- Develop healthy, high-protein, low-sugar baked goods and desserts using ingredients such as protein powders, alternative flours, natural sweeteners, nuts, seeds, and functional ingredients.
- Create recipes for protein donuts, cakes, cookies, brownies, muffins, and other desserts; test and improve taste, texture, appearance, nutrition, and shelf life.
- Calculate costs, yields, and nutritional values; maintain quality, portion sizes, and production standards.
- Develop products and seasonal flavours based on market trends; follow food safety, hygiene, and storage procedures; collaborate with management on commercialization.
Requirements
- Proven experience as a Pastry Chef, Baker, R&D Pastry Chef, or Product Development Chef, with strong baking and pastry knowledge.
- Hands-on experience developing healthy, high-protein, or low-sugar products is essential; one year of healthy-dessert experience is required.
- Understand ingredient functionality and nutritional reformulation; able to work independently and conduct recipe trials.
- Good understanding of food costing and production scalability; creative approach to product development and flavour combinations.
- Malayalam is required.
Preferred qualifications and experience
- Culinary or pastry qualification is preferred.
- Experience in a commercial bakery, dessert brand, café, or food production environment is preferred.
