The ideal candidate will have extensive knowledge of traditional and regional Mexican cuisine, strong leadership capabilities, and a passion for creating high-quality dishes with consistency, innovation, and attention to detail.
This role requires a hands-on chef who can inspire a team, engage with guests, maintain operational excellence, and continuously elevate the culinary offering.
Key Responsibilities
- Create, develop, and execute an authentic Mexican menu featuring both traditional recipes and modern interpretations.
- Oversee daily kitchen operations, ensuring exceptional standards in food quality, taste, presentation, and consistency.
- Lead, train, mentor, and manage a team of 6 kitchen colleagues, creating a positive, collaborative, and high-performance working environment.
- Maintain consistency across recipes, preparation methods, portion control, and plating standards.
- Actively manage food preparation, cooking, and service operations across all shifts.
- Engage with guests when required, creating meaningful connections, gathering feedback, and enhancing the overall dining experience.
- Source and select high-quality ingredients while working closely with suppliers to maintain authenticity, freshness, and effective cost control.
- Monitor stock levels, manage inventory, reduce wastage, and maintain food costs within approved budgets.
- Ensure full compliance with food safety, hygiene, HACCP, and sanitation standards.
- Collaborate with management on menu innovation, promotions, seasonal dishes, and special culinary events.
- Maintain kitchen equipment standards, ensuring proper usage, cleanliness, and preventive maintenance.
- Drive continuous improvement in kitchen processes, team performance, and guest satisfaction.

- Proven experience as a Head Chef, Sous Chef, or senior culinary leader specializing in
- Mexican or Latin American cuisine

- Strong knowledge of authentic Mexican ingredients, cooking techniques, flavors, and regional specialties.
- Experience in developing menus and creating unique dining concepts.
- Strong leadership, communication, and people-management skills.
- Ability to work in a fast-paced environment while maintaining quality and consistency.
- Strong understanding of kitchen financial management, including food cost control and waste management.
- Excellent organizational, planning, and time-management skills.
- Comprehensive knowledge of food safety standards, hygiene practices, and kitchen operations.
