The Role
We are looking for a highly skilled Matcha Specialist to spearhead the creative development and daily production for our specialty matcha bar. This is a dual-impact role: you will be the "alchemist" behind our signature beverage menu and the lead hand in our kitchen production, ensuring every ceremonial-grade whisk and infusion meets our high-end editorial standards.
The ideal candidate understands that matcha is more than a drink—it is a sensory experience. You will balance technical precision (temperature, ratios, and grade selection) with a flair for innovative flavor profiles that resonate with a luxury, design-conscious audience.
Key Responsibilities1. Recipe Development & Innovation
- Design and refine a curated menu of hot and cold matcha beverages, including signature lattes, seasonal infusions, and functional boosters.
- Experiment with high-quality ingredients (house-made nut milks, adaptogens, and botanical syrups) to create unique, high-converting recipes.
- Conduct regular "tasting labs" to ensure flavor consistency and aesthetic presentation align with our brand DNA.
2. Kitchen Production & Operations
- Manage the end-to-end production of matcha bases, syrups, and prep components.
- Oversee inventory of premium matcha powders (ensuring optimal freshness and storage) and specialty ingredients.
- Maintain rigorous quality control during high-volume periods to ensure every cup reflects our artisanal standards.
- Adhere to strict HACCP and food safety guidelines.
3. Training & Excellence
- Establish SOPs (Standard Operating Procedures) for whisking techniques, milk texturing, and layering.
- Train the front-of-house team on the nuances of different matcha grades and the "story" behind each recipe.
Candidate Profile
- The Expertise: Deep knowledge of Japanese tea culture and the technical differences between ceremonial, premium, and culinary grades.
- The Palette: A sophisticated culinary palate with the ability to balance the natural umami of matcha with modern, elevated flavors.
- The Aesthetic: An eye for "editorial" presentation—you understand that the visual layer of the drink is as important as the taste.
- The Experience: At least 2–4 years in a specialty coffee/tea environment or high-end pastry/culinary production.
- The Mindset: A proactive "maker" who thrives in a fast-paced kitchen environment and is obsessed with technical optimization.
Technical Skills
- Proficiency in traditional bamboo whisking (Chasen) and modern preparation methods.
- Advanced milk steaming and alternative milk integration.
- Knowledge of kitchen equipment maintenance (scales, high-speed blenders, induction).
