Head Baker

About The Role

Key Responsibilitiesproduction & Quality

• Prepare and oversee the production of cakes, sponges, fillings, frostings, desserts, and other baked products.
• Ensure all products meet the company's quality, taste, and presentation standards.
• Monitor product consistency across every order.
• Plan daily production schedules based on customer orders and forecasted demand.
• Minimize waste while maintaining high production efficiency.

Team Leadership

• Supervise, train, and motivate the bakery team.
• Assign daily tasks and monitor staff performance.
• Ensure teamwork, discipline, and a positive working environment.
• Conduct ongoing training to improve baking techniques and product quality.

Kitchen Operations

• Manage ingredient inventory and communicate purchasing requirements.
• Ensure all equipment is properly maintained and report any maintenance issues.
• Maintain an organized and clean production area.
• Monitor stock rotation using FIFO (First In, First Out) principles.

Food Safety & Hygiene

• Ensure compliance with UAE food safety regulations and HACCP standards.
• Maintain excellent hygiene and sanitation practices.
• Ensure proper storage of all ingredients and finished products.
• Conduct regular cleanliness checks throughout the kitchen.

Product Development

• Assist in developing new cake flavors and bakery products.
• Improve existing recipes for quality, efficiency, and cost control.
• Stay updated with current baking trends and techniques.

Requirements

• Minimum **5 years of professional baking experience**, including at least **2 years in a supervisory or head baker role**.
• Strong knowledge of cake production, baking techniques, fillings, icings, and desserts.
• Experience managing a bakery team.
• Ability to work under pressure while maintaining high quality standards.
• Excellent organizational and time management skills.
• Strong understanding of food safety and hygiene regulations.
• Physically fit and able to stand for long periods.
• Flexible to work weekends, holidays, and during peak seasons.

Preferred Qualifications

• Diploma or certification in Baking & Pastry Arts.
• Experience working in a high-volume cake production environment.
• Previous experience in the UAE or GCC is an advantage.
