**Job Description**
The **F&B Purchaser** is responsible for sourcing, negotiating, and procuring food and beverage products, ingredients, and supplies required for daily operations.
The role ensures cost efficiency, product quality, timely delivery, and compliance with company standards and food safety requirements.
Procurement & Sourcing
- Source and purchase all food and beverage items, raw materials, and operational supplies.
- Identify and evaluate suppliers based on quality, price, reliability, and compliance standards.
- Maintain an approved supplier list in coordination with management and QA/QC.
- Ensure procurement of goods meets operational requirements and budget guidelines.
Vendor Management
- Negotiate prices, contracts, payment terms, and delivery schedules with suppliers.
- Build and maintain strong relationships with vendors to ensure consistent supply.
- Monitor supplier performance including quality, delivery time, and service levels.
- Address and resolve any supply, quality, or delivery issues with vendors.
Quality & Compliance
- Coordinate with QA/QC and store teams to ensure all purchased items meet required specifications.
- Ensure all food items comply with food safety regulations and company standards.
- Reject or report non-conforming goods in coordination with QA/QC and operations teams.
- Ensure suppliers provide required certifications (e.g., hygiene, halal, food safety compliance where applicable).
Cost Control & Budgeting
- Monitor and control purchasing costs in line with approved budgets.
- Identify cost-saving opportunities without compromising quality.
- Prepare price comparisons and market analysis for procurement decisions.
- Support management in achieving food cost targets and financial efficiency.
Order Processing & Documentation
- Prepare and process purchase orders accurately and in a timely manner.
- Ensure proper documentation for all purchases, invoices, and delivery records.
- Track orders from placement to delivery to ensure timely fulfillment.
- Maintain accurate procurement records and filing systems.
Inventory Coordination
- Coordinate closely with storekeepers and kitchen teams to monitor stock levels.
- Forecast purchasing needs based on consumption trends and operational demand.
- Prevent stock shortages and overstock situations through effective planning.
- Support inventory control and stock optimization initiatives.
Reporting
- Prepare regular procurement reports including purchase summaries, cost analysis, and supplier performance reports.
- Maintain updated price lists and market trends for key commodities.
- Report any procurement issues, delays, or risks to management.
Health, Safety & Compliance
- Ensure all purchased items comply with food safety and hygiene regulations.
- Work closely with QA/QC to maintain compliance with HACCP and internal standards.
- Ensure ethical and transparent procurement practices.
Additional Responsibilities
- Support menu planning and cost estimation for new dishes or concepts.
- Assist in supplier audits and evaluations when required.
- Perform any additional procurement-related duties assigned by management.
**Experience Level**
- 3+ year of experience in food & beverage service, preferably in fine dining or themed restaurants.
