About This Role
The Role
We are looking for a commercially driven and detail-focused **F&B Cost Controller** to take ownership of cost efficiency and financial discipline across our standalone restaurant operation.
This is not just a back-office role — you will be at the core of the business, partnering with Culinary, Operations, and Procurement to ensure that every plate served delivers **both quality and profitability**.
What You’ll Be Responsible For
- Own the Numbers
- Drive and monitor food & beverage cost performance against budget
- Analyze daily, weekly, and monthly Cost of Sales and variance reports
- Identify gaps, wastage, and inefficiencies — and act on them
- Control the Operation
- Oversee inventory management, stock counts, and reconciliation
- Ensure alignment between POS, inventory systems, and finance records
- Maintain accurate recipe costing, portion control, and menu pricing
- Partner with the Business
- Work closely with Chefs on **menu engineering and profitability analysis**
- Collaborate with Procurement to secure quality products at optimal cost
- Monitor supplier pricing and support negotiations for consistency
Drive Discipline & Compliance
- Ensure adherence to company policies, audit standards, and UAE regulations
- Deliver accurate and timely month-end reporting
- Build cost awareness culture within the team
What We’re Looking For
- Bachelor’s Degree in Accounting, Finance, or Hospitality
- 3–5 years’ experience in a **standalone restaurant or premium dining concept**
- Strong understanding of **F&B operations, especially menu-driven concepts**
- High attention to detail with strong analytical mindset
- Hands-on, proactive, and solution-oriented approach
- Strong communication skills — able to influence both kitchen and operations
Job Type: Full-time
Pay: AED4,500.00 - AED6,500.00 per month
