Position Summary

The Commis I is a key member of a professional brigade, upholding exceptional culinary standards in a fine-dining environment.

This role demands precision, discipline, and a deep respect for ingredients, techniques, and presentation.

The Commis I supports senior chefs in executing refined dishes while ensuring consistency, hygiene, and adherence to the highest standards expected in luxury hospitality across the GCC.

Key Responsibilities

  • Execute mise en place and food preparation with precision, following established recipes and plating guidelines.
  • Maintain consistency in taste, texture, and presentation in accordance with fine dining standards.
  • Assist the Chef de Partie in managing a specific kitchen section during service.
  • Ensure all dishes leaving the section meet the restaurant’s quality and presentation standards.
  • Uphold strict hygiene and sanitation practices in line with HACCP and local municipality regulations.
  • Handle premium ingredients with care, ensuring proper storage, labeling, and rotation (FIFO).
  • Maintain a clean, organized, and efficient workstation at all times.
  • Support in minimizing food wastage and controlling portioning.
  • Demonstrate a strong understanding of classical and modern cooking techniques.
  • Respond efficiently to service pressure while maintaining composure and attention to detail.
  • Collaborate effectively within the kitchen brigade to ensure seamless service.
  • Follow instructions from senior chefs with accuracy and professionalism.
  • Assist in training and guiding junior kitchen staff when required.

Qualifications & Experience

  • Diploma or professional certification in Culinary Arts.
  • Minimum 2–3 years of experience in a high-end restaurant or 4/5-star hotel.
  • Exposure to fine dining or Michelin-standard kitchens is highly desirable.
  • Strong foundation in classical culinary techniques with an understanding of contemporary trends.
  • HACCP certification or equivalent food safety training.
  • Knowledge of international cuisines and modern plating techniques.
