Role overview

Southern Sun is hiring a Commis 1 - Butchery to support the hotel's butchery and culinary operations.

Butchery duties

  • Prepare, trim, cut, and portion meat, poultry, and other butchery products to required standards.
  • Follow recipes, portion controls, and approved methods to deliver consistent quality, yield, and presentation.
  • Receive, inspect, and store meat and related products according to food safety and stock control procedures.
  • Prepare ingredients, equipment, and work areas for daily production.
  • Support the Chef de Partie, Butcher, and culinary team with smooth operation of the butchery section.

Safety, hygiene, and stock

  • Maintain food preparation, hygiene, and cleanliness standards in butchery and kitchen areas.
  • Monitor stock levels, minimize wastage, and maintain correct storage, labeling, and rotation.
  • Use knives, machinery, and butchery equipment safely and report defects or hazards.
  • Follow food safety, health and safety standards, and hotel policies and procedures.
  • Maintain a clean, organized, and safe workplace and deliver consistent standards individually or as part of a team.

Requirements

  • Relevant culinary qualification or formal butchery training.
  • Previous experience in a professional kitchen, hotel, or butchery environment.
  • Knowledge of meat preparation, portion control, food safety standards, and kitchen procedures is essential.
  • Candidate should be passionate, organized, reliable, and willing to learn.
  • Ability to work shifts, weekends, and public holidays according to operational needs.

Work schedule and setting

  • Work is based in the hotel butchery and kitchen environment.
  • Shift work, including weekends and public holidays, may be required according to operational needs.
