Role overview
Lead hotel kitchen operations across food and beverage outlets, including restaurants, banqueting, and in-room dining.
Kitchen leadership and operations
- Design seasonal menus suited to hotel positioning, guest demographics, and UAE food-cost targets.
- Manage sous chefs, pastry chefs, and kitchen staff across shifts; lead training, mentoring, and succession planning.
- Control food costs through menu engineering, portion control, and procurement.
- Maintain equipment, cleaning schedules, hygiene, and audit readiness.
- Oversee MICE and large-scale banqueting catering for groups of up to 2,000 covers.
- Build supplier relationships and drive culinary innovation through outlet concepts, pop-ups, and seasonal promotions.
Qualifications and experience
- Culinary arts degree or equivalent professional kitchen training.
- 10 to 15 years of culinary experience, including at least five years as an Executive Chef in the UAE or GCC.
- Experience managing multi-outlet kitchens in a UAE luxury or five-star hotel.
- Demonstrated record managing food costs below 28% in UAE hotel operations.
- Multi-cuisine expertise for an international guest mix.
Food safety qualifications
- Dubai Municipality food safety certification or Abu Dhabi ADAFSA-approved food handler qualification.
- Deep knowledge of UAE food-safety regulations and HACCP implementation.
- Arabic language skills are preferred for supplier and authority management.
